For our 30th Genever special we picked something extra special.
A three-year-old peated genever aged in PX casks. The genever is distilled from equal parts corn, rye and Heavily Peated malted barley. The peated malted barley provides the backbone and gives a lovely delicate smokey quality to the genever. The new spirit is triple distilled in pot stills. Then it is partially distilled a fourth time
with selected botanicals such as Juniper, Licorice and Aniseed. Finally, the genever and the botanical distillate are blended before ageing in PX casks.
Tasting notes:
Nose: The rich vanilla, honey and delicate smokiness is the first
thing you notice. If you give the genever a little time in the glass the character changes slightly and you get more delicate fruity aromas of apricot, oranges and lime. The character from the PX casks is subtle with chocolate and liquorice.
Taste: Warm and rich. Subtle peat smoke and stewed apricots and
peaches. Chocolate covered
apricot pie.
Finish: Medium long with subtle peat
